100 Day Challenge: Day 21

I made STUFFED EGGPLANT ROLLS!

Didn't eat alot today, but I find that the more nutritious I eat, the less hungry I am. And I bought local, fresh eggplants, cucumbers, okra, and tomatoes at the market on Tuesday, so my meals have been extra healthy lately.

Plus I just planted a DRAGON FRUIT plant so that I can get more of this yumminess:

Challenge update: Some people have asked me what kind of a diet I'm on, and right now, I'm just focused on eating as healthy as I can. So, if there is a choice between pancakes and bananas, I'll eat the bananas. I haven't been perfect - I've been snacking between meals, but I'm ok with that, because I'm not hung up on perfection, just steady progress.

As far as diets go, I am not into doing something temporary - I'm establishing a life-long way of eating for myself. What I'm moving towards is getting to the point where my meals are pretty minimalistic most of the time. So tonight for dinner, instead of having a plate with 10 different ingredients going on, I just have a bowl of chopped up avocado with a little lemon, salt and pepper. That's it.

And isn't the dragonfruit that I had for breakfast AMAZING! It's my first time eating it. I bought it from a friend who bought it from a lady selling them by the side of the road. They are really hard to grow and the plant only produces one fruit at this one time in the year. That one fruit was $6 and so worth it. It tastes a little like Kiwi but without the bitterness and it has a unique sweetness.

I need to find more...

100 Day Challenge: Day 8: Cheat Day Friday

Today, I had an apple for breakfast.
And then it was all downhill from there!
Hahaha

That's because I also had cheesy stuffed mushrooms, macaroni and cheese, ice cream, apple pie...
So I hereby dub Friday as my cheat day. :)

Those stuffed mushrooms were darn good...

Easy, Simple Quiche



I made quiche for breakfast today and I took pictures to share the recipe with you. :)


EASY SIMPLE QUICHE

Take a pie dish and spray it with a little bit of oil.
Take your refrigerated pie crust and fit it into the pie dish.

Cook some bacon and chop it up.
Chop up some white onion and cook that too.
Shred some cheese.
Chop up some scallions.

Whisk together 4 eggs, 1 cup of milk, and a teensy bit of nutmeg, salt and pepper in a bowl.

Take your pie dish with the pastry dough in it and layer in the following ingredients:
- onions
- bacon
- egg mixture
- cheese
- scallions

Bake in the oven at 375 degrees for 30 minutes.
Voila!

I'm kicking this challenge up a notch. Today was the first day of daily my exercise routine. I walked/jogged by the beach today for 20 minutes.

I need to find a cardio video on youtube that isn't too long or strenuous. Any recommendations?

Challenge update: My taste for meat is declining. I just treat it as an added flavor now. For instance, I added a little ground beef to my eggplant lasagna. I'm eating alot of mango right now because their in season and TASTE LIKE THE FOOD OF THE GODS.
My exercise routine is non-existent, but by getting my eating habits to another level will definitely help me improve on the next thing.

I stopped by a fruit and vegetable stand and got all these fresh mangos and bananas!

Challenge Update:
I haven't made perfect progress, but I can definitely say that knowing that I am doing this challenge and being held accountable to reporting my progress here has helped me be sooooo much more intentional about my eating habits. Usually I head out the door without breakfast, but now I'm getting really good at getting in a smoothie or an apple at least.
